1 cup old fashioned oats (5-minute oats)
1/2 cup packed brown sugar
1 cup all-purpose flour
1/2 tsp ground cinnamon
1/4 tsp salt
3/4 cup applesauce

Ricotta Cheese Pancakes

1/2 cup low fat ricotta cheese
1/4 cup egg whites
3 tbs flour
2 tsp Splenda
1 tsp baking soda
Mix all ingredients. Spoon onto warm, non-stick skillet, forming thick batter into circles. Flip when tops bubble.
Makes four 4-inch pancakes
Serving: 2 or 4 pancakes
Calories: about 100-125/200-250 (brands vary)
Serve with berries (or sugar-free maple syrup I predict would be good.)
