1 cup old fashioned oats (5-minute oats)

1/4 tsp salt
3/4 cup applesauce
1/3 cup vegetable oil
1 tsp vanilla extract

Preheat oven to 400. Spray muffin tin or line with paper cups.

Combine oats, sugar, flour, baking powder, baking soda, cinnamon, salt, and raisins. In a separate bowl combine applesauce, oil, egg, and vanilla. Add to dry mixture, stirring just until moistened. Divide evenly among 12 cups.

Bake 20-25 minutes or until tester comes out clean.

For me: 1 starch, 1 fruit

These would be so good with dried cranberries instead of raisins and added walnuts. I’ll do that next.

These look really yummy! I might try this and see if I can tweak it for more fiber!

I hate that there’s not much! I consider them kind of cheaty because there’s one measly gram.

I wonder if whole wheat all-purpose flour would help? Or maybe adding something like flax seeds? Hmm…

These muffins do sound really great! You could easily increase the fiber by using whole wheat flour in place of the all-purpose flour and then try adding 4 - 6 T. of ground flaxseed meal. You could also decrease the oil to 1/4 C. without even noticing. If you make those changes, add an additional egg or 2 egg whites because you’ll need some extra moisture to get the batter to the right consistency. That would also boost the protein a bit. :-)

By the way, I have those silicone muffin cups and love them!
